Creamy Zucchini Casserole



4    c diced zucchini                    ¾ c shredded carrots
½ c chopped onion                      6 T melted butter
1 stuffing mix w/ flavor packet           1 can cream of chicken soup
½ c sour creams

Preheat oven to 350°.  Sauté vegetables in 4 T butter. Stir in ½ of stuffing mix and flavor packet.  Mix together soup and sour cream.  Add to vegetables.  Put in casserole dish.  Now add 2 T melted butter to the ½ stuffing mix and put on top of casserole.  Bake for 30 minutes.
 Yield: 12 servings                     Prep time: 30 minutes + baking time
